Peppermint Surprise Cookies!

Cream:
1 C Butter
1 C Pwd Sugar
Add:
1 Egg
1/2 tsp. salt
2 1/2 C Flour
1 T peppermint Extract or a few drops to taste of straight pm oil
Red food coloring for dough. Green for Frosting. Crushed Candy Canes to top frosting.
Chill dough at least 2 hrs. It does help with this particular cookie.
Then roll into small balls and put 3-4 mint chlt chips in the middle.
Bake 350 for 5-7 minutes. Cool. Frost and sprinkle candy on top.
Creme De Menthe Frosting:
1/4 C Butter
1 C Pwd Sugar
5 T. Creme De Menthe
Green food coloring
Single makes about 2 doz.
