Chicken Raman Salad

My sister Diane gave me this recipe several years ago. We had a variation of it last week at a party.
I decided to make this for lunch and then I changed the dressing recipe. It had too much oil in it.
So here is my version. It is quick and fast to make and great for the hot summer days.

Chicken Raman Salad

1 head of Cabbage chopped or grated like coleslaw
6 green onions chopped fine (optional)
2 pkg. Top Raman noodles broken almost crushed
1 can chicken breast
1 c. slivered almonds
Other vegetables cut up or grated: cucumber, carrots, summer squash etc. (Optional)

Dressing
1/4 c. oil
1/4 c. red wine vinegar or apple cider vinegar
1/4 c. sugar
All the juice from the chicken

Sprinkle over salad
1 t. salt
1 t. pepper

Stir and enjoy!
